What is an essential oil?

An essential oil is a hydrophobic (not water loving) liquid containing volatile (vaporizing) aromatic (fragrant) compounds from plants. These oils are extracted from plant parts (e.g. seeds, roots, leaves, fruit skin, and flowers), mostly by steam distillation. Essential oils are used in aromatherapy, ethnomedicine, perfumes, cosmetics, and in commercially flavored food.
